That spread is the whole reason a single cups-to-grams number cannot exist.

What density means when you are baking
Density is simply how much mass an ingredient packs into a given space, and in a kitchen it is decided by two things: how heavy the material itself is, and how much air sits between the pieces. Panko is the clearest case of the second. It is made from crustless bread dried into large flat flakes, so a cup of it is mostly air and weighs about 50 grams. Ordinary dried breadcrumbs are ground fine, settle into the gaps, and come in at roughly double that from the same starting material.
Honey sits at the other end for the opposite reason. It is a dense liquid with no air in it at all, so a cup weighs about 340 grams, more than a cup of water. This is also why swapping honey for sugar by volume goes wrong: a cup of each differs by well over a hundred grams, and the honey brings water with it.
The practical consequence is that measuring by volume carries an error that measuring by weight does not. For soups and stews it does not matter. For bread, pastry and anything where the ratio of flour to liquid decides the texture, it is the difference between a tender crumb and a dense one. Why does a cup of one ingredient weigh so much more than a cup of another?
Because a cup measures volume and a gram measures mass, and the bridge between them is density. A cup of panko breadcrumbs weighs about 50 grams because it is mostly air with a lot of surface area, while a cup of honey weighs about 340 grams because it is dense and packs with almost no gaps. That is a factor of 6.8 at exactly the same volume.
Can I use this chart for any recipe?
Yes, as long as the recipe means a US cup of 240 ml, which most modern recipes written in American English do. If your recipe is Australian or New Zealand it means a 250 ml metric cup, which is 4.2 percent larger, and a British recipe using cups at all probably means the 284 ml imperial cup.
