How oven temperature conversion works
Recipes from different countries assume different oven scales. Much of Europe and Australia use Celsius, the United States uses Fahrenheit, and older British recipes call for gas marks. Converting between them is essential when you follow a recipe written for a different kitchen, and getting it wrong by a whole scale can ruin a bake.
The Celsius to Fahrenheit formula is simple: multiply the Celsius value by nine fifths, which is 1.8, then add 32. To go the other way, subtract 32 from the Fahrenheit value and multiply by five ninths. Gas marks do not follow a neat formula, so they are matched from a standard chart, where each step of roughly 14 degrees Celsius moves you up one gas mark. The most useful landmark to memorise is that gas mark 4 is 180 degrees Celsius or 350 degrees Fahrenheit, the moderate setting at the heart of most baking.
One important adjustment is for fan ovens, also called convection ovens. Because they circulate hot air, food cooks faster and browns more evenly, so you should lower the temperature by about 20 degrees Celsius compared with a conventional oven. The chart above lists conventional temperatures, so if your oven has a fan, drop each Celsius figure by 20 or reduce the baking time slightly and keep an eye on the colour.
